Aji Bourbon is a rare Colombian variety with a reputation for expressive, high-acidity coffees. This honey-processed lot comes from Yessica and Diego Parra at El Mirador in Huila, where the variety’s bright fruit character comes through with plenty of intensity.
In the cup, we found a bright, juicy acidity with notes of cherry and a subtle savory depth. The body is relatively short with a slightly dry finish, while sweet, floral aromatics add some softness to the cup. This coffee’s profile can shift from day to day, so we recommend giving it time to rest and brewing it every few days as it continues to degas.
We recommend four weeks of rest from roast date for the best cup.
